Presto Pasta Night #137 Recap

It's the fun part of the week - recap time. I've had a great time feasting on your marvellous pasta offerings, be they soup, stir-fried, baked or steamed, made with vermicelli, rice noodles, somen, or fettuccine, decadent or nutritious, it has been a delight and I'm sure once you peruse the menu, there's something here that is bound to please and satisfy any cravings.

Thank you all for taking part and sharing your dishes with us. The recap has been presented in the order they were received.

So without any further delay, onto the goodness...

Macaroni & Cheese with Gruyere and Mushrooms
Joanne from Eats Well with Others

Joanne takes a French twist and evokes the spirit of the Marathon du Medoc to create an uber mac and cheese, incorporating cremini mushrooms and Gruyere to the mix.

Tangy Prawn Fried Mai Fun
Daphne from More than Words

Daphne creates a new dish from her grandmother's chilli stir fried prawns with the addition of rice vermicelli. I'm sure this will be a firm family favourite destined to be passed on.

Spaghetti with Crab and Watercress
Abby from Eat the Right Stuff

A simply elegant dish that is also very simple. Crab meat is mixed with lemon juice and zest, chilli, garlic, shredded watercress and a splash of olive oil to bring it all together.

Baby Spinach and Gojiberry Somen Noodles
Tigerfish from Teczcape - An Escape to Food

Tigerfish offers up a perfect dish for those days when you need something fast but something that is still good for you. This soup uses somen noodles, baby spinach and wolfberries (gojiberries) with a touch of sesame oil to finish.

Squashy, Cheesy Pasta Bake
Heather from Girlichef

The name of the squash/pumpkin might be in doubt but there's no doubt that this is a dish that has you craving seconds. Pureed roasted squash is added to a base of cooked Italian sausages and mushrooms, it then gets a cheesy hit from cheddar, ricotta and parmesan. To top it off, it's bathed in a mix of eggs and baked.

Lasagna
Kait from Pots and Plots

Who doesn't love lasagna! Kait shows us how we can eat our lasagna now and still have some for later. She shows us how to make mini-loaf versions using a crock pot and how to prepare another for freezer storage.

Dry noodles in Oregano Flavour
Radha from Urban Bites: Delizie da hong kong

Radha adds a touch of the Mediterranean by incorporating dried oregano into this dish of stir fried noodles - smoked ham, loofa and eggs complete the dish.

Tuna Pasta Salad
Ruth from Once Upon a Feast

Having been inspired by a tuna avocado salad, an unfortunate lack of avocado didn't stop PPN doyen, Ruth from making this rather delicious Tuna Pasta Salad. Joining farfalle pasta are canned tuna, black olives and spring onions and it's all drizzled with an olive oil and rice vinegar dressing.

Nerano Spaghetti/Gli spaghetti di Nerano
Cinzia from Cindystar

Cinzia is joining in for her first of, I hope, many Presto Pasta Nights and takes us on a journey to Nerano, a little resort town on the Amalfi and into the kitchen of a favoured restaurant where the secret of this pasta dish is revealed. Be sure to check out the action photos of the Chef making this fried zucchini, caciocavallo and basil pasta.

Jiu Cai Jiaozi (Chinese Pork and Garlic Chive Dumplings)
Anna from Morsels and Musings

I think we're all very fond of those delicious pork dumplings and Anna shows us just how simple they are to make. Whether you steam or fry them, I don't think you can ever have enough.

Pancit Canto - Bihon
Sherra from Our Taste of Life

Childhood memories are evoked in Sherra's Pancit - a dish of dry stir-fried noodles. Here, Sherra uses squid balls, pork and chorizo, carrot, onion, garlic, chinese cabbage and two noodles, pancit canton (chow mein noodles) and pancit bihon (rice noodles).

Peach Noodle Kugel
Chaya from Chaya's Comfy Cook Blog

I'm a novice when it comes to kugels so I'm fascinated by Chaya's fabulous gluten free kugel studded with pineapple pieces, peaches and dried cranberry. Eggs are beaten with the fruit juices and then stirred through the cooked noodles before being placed in ramekins. A mix of cinnamon and sugar is sprinkle over the top and then baked.

Trofie with Potato, Peas and Pesto

trofie with potato, peas and pesto© by Haalo

I play around with a Ligurian speciality, adding purple congo potatoes and green peas to the mix.

I thought this was the end of this week's pasta journey but no, there is more. Unfortunately three entries were gobbled by the spam filter, so my apologies to those involved. Here are those delicious entries:

Chicken Pasta Salad
Katie from One Little Corner of the World

A healthy Chicken Pasta Salad that we'd be happy to see in our lunchbox. Chicken breasts have been marinated in a flavoursome mix of rosemary, garlic and Dijon mustard and then baked. They are then combined with whole wheat pasta, artichokes, peppers, sun-dried tomatoes and dill and dressed in a mix of mayonnaise and mustard.

Flour Vermicelli in Chicken Soup
Little Inbox at Eating Pleasure

Comfort food never looked so good. Little Inbox uses Flour Vermicelli which are very fragile, thin, white noodles made from rice flour and for the time pressed cook in mere seconds. They have been combined with free-range chicken, Asian greens and hard boiled eggs.

Minestrone Soup
My Experiments & Food

While preparing to pack up for a vacation, the job of cleaning out the fridge results in this classic creation of Minestrone. Containing kidney beans, potato, tomatoes, onions, garlic, pasta and an assortment of veggies on hand, it's wholesome and delicious.

Don't forget that next week, our pasta mistress Ruth is hosting - send your entries to ruth (at) 4everykitchen (dot) com and check for the recap on November 5th
